- 2 medium zucchini, grated
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons olive oil, plus more as needed for frying
Instructions
- Place the grated zucchini in a bowl, sprinkle with the salt, and let it rest for 10 minutes.
- Squeeze the zucchini well using a clean kitchen towel or cheesecloth to remove excess moisture.
- In a large bowl, combine the drained zucchini, eggs, flour, Parmesan cheese, parsley, black pepper, and garlic powder.
- Mix until a thick batter forms.
- Heat the olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly with the back of a spoon.
