These zucchini French fries are a lighter, delicious take on classic fries. Coated in a seasoned breadcrumb mixture and baked or air-fried until crisp, they make an easy side dish, appetizer, or snack. Serve them hot with your favorite dip for the best texture and flavor.

  1. Preheat the oven to 220 C or set the air fryer to 200 C. Line a baking sheet with parchment paper if using the oven.
  2. Wash the zucchini and cut them into fry-shaped sticks, about 1 cm thick.
  3. Place the zucchini sticks in a bowl, sprinkle with salt, and let them sit for 10 minutes. Pat them dry with paper towels to remove excess moisture.
  4. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan, garlic powder, paprika, and black pepper mixed together.
  5. Coat each zucchini stick first in flour, then in egg, and finally in the breadcrumb mixture, pressing gently so the coating sticks well.
  6. Arrange the coated zucchini on the baking sheet or in the air fryer basket in a single layer. Lightly spray with cooking spray or drizzle with a little olive oil.
  7. Bake for 18 to 22 minutes, flipping halfway through, or air-fry for 12 to 15 minutes, shaking the basket once, until golden and crisp.
  8. Serve immediately with marinara sauce, garlic mayo, or another favorite dip.
