- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 teaspoon ground turmeric
- 2 cups hot vegetable broth or water
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley, optional
Instructions
- Heat the olive oil in a medium saucepan over medium heat.
- Add the onion and cook for 3 to 4 minutes, stirring often, until softened.
- Add the garlic and cook for 30 seconds, just until fragrant.
- Stir in the rice and turmeric, coating the grains well.
- Pour in the hot broth or water, then add salt and black pepper.
- Bring to a gentle boil, reduce the heat to low, cover, and simmer for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender.
- Remove from the heat and let it rest, covered, for 5 minutes.
