Refried beans are a comforting, versatile side dish with a creamy texture and savory flavor. This easy version uses cooked beans, onion, garlic, and warm spices to create a rich dish that works well alongside rice, grilled meats, tacos, enchiladas, or as a hearty dip. It is simple, budget-friendly, and naturally satisfying.
Ingredients
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 4 cups cooked pinto beans, drained and rinsed if using canned
- 1/2 cup bean cooking liquid or water, plus more as needed
- 1 teaspoon ground cumin
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder, optional
- 1 tablespoon lime juice, optional
- 2 tablespoons chopped fresh cilantro, optional
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the onion and cook for 4 to 5 minutes, stirring often, until softened.
- Stir in the garlic and cook for 30 seconds, just until fragrant.
- Add the beans, bean cooking liquid or water, cumin, salt, black pepper, and chili powder if using.
- Cook for 5 to 7 minutes, stirring occasionally, until the beans are hot and well seasoned.
- Mash the beans with a potato masher or the back of a spoon until you reach your preferred texture.
- If the beans seem too thick, add a little more water or cooking liquid, one tablespoon at a time, until creamy.
- Stir in the lime juice and cilantro if using.
- Taste and adjust the seasoning before serving warm.
