A classic green bean casserole with a creamy mushroom sauce and a crisp onion topping. This easy baked side dish is rich, comforting, and ideal for holidays, Sunday dinners, or any meal that needs a flavorful vegetable accompaniment.
Ingredients
- 450 g green beans, trimmed and cut if needed
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 250 g mushrooms, sliced
- 2 tablespoons all-purpose flour
- 240 ml milk
- 120 ml vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 60 g grated Parmesan cheese
- 120 g crispy fried onions, divided
Instructions
- Preheat the oven to 190 C. Lightly grease a medium casserole dish.
- Blanch the green beans in boiling salted water for 3 to 4 minutes, then drain and transfer to ice water. Drain again and set aside.
- Melt the butter in a skillet over medium heat. Add the onion and cook until soft, about 3 minutes. Stir in the garlic and mushrooms and cook until the mushrooms release their moisture and begin to brown.
- Sprinkle in the flour and cook for 1 minute, stirring constantly. Slowly whisk in the milk and vegetable broth until smooth.
- Season with salt, pepper, and nutmeg. Simmer for 3 to 5 minutes, until the sauce thickens. Stir in the Parmesan cheese.
- Fold in the green beans and half of the crispy fried onions. Transfer the mixture to the prepared casserole dish.
- Bake for 20 minutes. Top with the remaining crispy fried onions and bake for 5 to 10 minutes more, until hot and lightly browned.
- Let stand for 5 minutes before serving.
