A classic green bean casserole with a creamy mushroom sauce and a crisp onion topping. This easy baked side dish is rich, comforting, and ideal for holidays, Sunday dinners, or any meal that needs a flavorful vegetable accompaniment.

  1. Preheat the oven to 190 C. Lightly grease a medium casserole dish.
  2. Blanch the green beans in boiling salted water for 3 to 4 minutes, then drain and transfer to ice water. Drain again and set aside.
  3. Melt the butter in a skillet over medium heat. Add the onion and cook until soft, about 3 minutes. Stir in the garlic and mushrooms and cook until the mushrooms release their moisture and begin to brown.
  4. Sprinkle in the flour and cook for 1 minute, stirring constantly. Slowly whisk in the milk and vegetable broth until smooth.
  5. Season with salt, pepper, and nutmeg. Simmer for 3 to 5 minutes, until the sauce thickens. Stir in the Parmesan cheese.
  6. Fold in the green beans and half of the crispy fried onions. Transfer the mixture to the prepared casserole dish.
  7. Bake for 20 minutes. Top with the remaining crispy fried onions and bake for 5 to 10 minutes more, until hot and lightly browned.
  8. Let stand for 5 minutes before serving.
