  1. Heat the olive oil in a large pot over medium heat.

  4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.

  6. Season with salt and black pepper.
  7. Stir in the spinach and cook for 2 to 3 minutes until wilted.
