Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, thinly sliced
- 2 carrots, peeled and cut into bite-size pieces
- 2 potatoes, peeled and cut into chunks
- 1 pound boneless chicken thighs, cut into pieces
- 3 cups water
- 1 apple, peeled and grated
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 1 package Japanese curry roux, about 3.5 ounces
- Cooked short-grain rice, for serving
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion and cook, stirring often, until softened and lightly golden, about 5 minutes.
- Add the chicken and cook until the outside is no longer pink.
- Stir in the carrots and potatoes, then pour in the water.
- Bring to a boil, then reduce the heat to low, cover, and simmer until the vegetables are tender, about 20 minutes.
- Add the grated apple, soy sauce, and ketchup, stirring to combine.
- Break the curry roux into pieces and add it to the pot. Stir until fully dissolved and the sauce becomes thick and glossy.
- Simmer gently for 5 minutes, stirring occasionally, until the curry reaches your desired consistency.
- Serve hot over cooked rice.
