Burger Soup is a comforting, filling one-pot meal inspired by the flavors of a classic hamburger. It combines seasoned ground beef, tender potatoes, carrots, celery, onions, tomatoes, and a savory broth for a rich and satisfying soup that is easy to make any night of the week.
Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 3 medium potatoes, peeled and diced
- 1 cup frozen corn
- 1 can diced tomatoes, 14.5 ounces
- 4 cups beef broth
- 1 cup water
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 bay leaf
- 1/2 cup shredded cheddar cheese, optional for serving
- 2 tablespoons chopped parsley, optional for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Add the onion, garlic, carrots, and celery. Cook for 4 to 5 minutes, stirring often, until the vegetables begin to soften.
- Stir in the tomato paste, thyme, paprika, salt, and black pepper. Cook for 1 minute to deepen the flavor.
- Add the potatoes, corn, diced tomatoes, beef broth, water, Worcestershire sauce, and bay leaf. Stir well and bring to a boil.
- Reduce the heat to low, cover partially, and simmer for 25 to 30 minutes, or until the potatoes are tender.
- Remove the bay leaf, taste, and adjust seasoning if needed. Serve hot, topped with cheddar cheese and parsley if desired.
