Burger Soup is a comforting, filling one-pot meal inspired by the flavors of a classic hamburger. It combines seasoned ground beef, tender potatoes, carrots, celery, onions, tomatoes, and a savory broth for a rich and satisfying soup that is easy to make any night of the week.

  1. Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  2. Add the onion, garlic, carrots, and celery. Cook for 4 to 5 minutes, stirring often, until the vegetables begin to soften.
  3. Stir in the tomato paste, thyme, paprika, salt, and black pepper. Cook for 1 minute to deepen the flavor.
  4. Add the potatoes, corn, diced tomatoes, beef broth, water, Worcestershire sauce, and bay leaf. Stir well and bring to a boil.
  5. Reduce the heat to low, cover partially, and simmer for 25 to 30 minutes, or until the potatoes are tender.
  6. Remove the bay leaf, taste, and adjust seasoning if needed. Serve hot, topped with cheddar cheese and parsley if desired.
