This Shepherd's Pie with Ground Beef is a hearty, satisfying main course made with a savory meat filling, tender vegetables, and a rich layer of mashed potatoes baked to a golden finish. It is an ideal recipe for a comforting weeknight dinner or a make-ahead family meal.

  1. Preheat the oven to 400 F and lightly grease a medium baking dish.
  2. Place the potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook until tender, about 15 to 20 minutes.
  3. Drain the potatoes well, then mash with butter, warm milk, salt, and black pepper until smooth. Set aside.
  4. While the potatoes cook, heat the olive oil in a large skillet over medium heat.
  5. Add the onion and carrots and cook for 4 to 5 minutes, until softened. Add the garlic and cook for 30 seconds.
  6. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  7. Stir in the tomato paste, Worcestershire sauce, beef broth, salt, black pepper, and thyme. Simmer for 5 to 7 minutes, until the mixture thickens slightly.
  8. Add the peas and stir to combine. Taste and adjust seasoning if needed.
  9. Transfer the beef mixture to the prepared baking dish and spread it into an even layer.
  10. Spoon the mashed potatoes over the filling and spread carefully to cover the surface. If desired, sprinkle with cheddar cheese.
  11. Bake for 20 to 25 minutes, until the top is lightly golden and the filling is bubbling around the edges.
