This Shepherd's Pie with Ground Beef is a hearty, satisfying main course made with a savory meat filling, tender vegetables, and a rich layer of mashed potatoes baked to a golden finish. It is an ideal recipe for a comforting weeknight dinner or a make-ahead family meal.
Ingredients
- 1 1/2 pounds ground beef
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 pounds potatoes, peeled and cut into chunks
- 4 tablespoons butter
- 1/2 cup milk, warmed
- 1/2 teaspoon salt, for the mashed potatoes
- 1/4 teaspoon black pepper, for the mashed potatoes
- 1/2 cup shredded cheddar cheese, optional
Instructions
- Preheat the oven to 400 F and lightly grease a medium baking dish.
- Place the potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook until tender, about 15 to 20 minutes.
- Drain the potatoes well, then mash with butter, warm milk, salt, and black pepper until smooth. Set aside.
- While the potatoes cook, heat the olive oil in a large skillet over medium heat.
- Add the onion and carrots and cook for 4 to 5 minutes, until softened. Add the garlic and cook for 30 seconds.
- Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Stir in the tomato paste, Worcestershire sauce, beef broth, salt, black pepper, and thyme. Simmer for 5 to 7 minutes, until the mixture thickens slightly.
- Add the peas and stir to combine. Taste and adjust seasoning if needed.
- Transfer the beef mixture to the prepared baking dish and spread it into an even layer.
- Spoon the mashed potatoes over the filling and spread carefully to cover the surface. If desired, sprinkle with cheddar cheese.
- Bake for 20 to 25 minutes, until the top is lightly golden and the filling is bubbling around the edges.
- Let rest for 10 minutes before serving.
