Shepherd's Pie is a classic comforting dish featuring a rich, savory meat and vegetable filling topped with smooth mashed potatoes and baked until golden. This version is easy to prepare, satisfying, and ideal for a complete family meal.
Ingredients
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 lb ground beef
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 1 cup frozen peas and carrots
- 1 tsp dried thyme
- Salt and black pepper to taste
- 2 lb potatoes, peeled and cut into chunks
- 4 tbsp butter
- 1/2 cup milk
- 1/4 cup grated cheddar cheese, optional
Instructions
- Preheat the oven to 400 F or 200 C.
- Place the potatoes in a large pot, cover with salted water, and boil until tender, about 15 to 20 minutes.
- Drain the potatoes, then mash with butter and milk until smooth. Season with salt and pepper. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute more.
- Add the ground beef and cook, breaking it up, until browned and no longer pink.
- Stir in the tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper.
- Add the peas and carrots and simmer until the mixture thickens slightly, about 5 to 7 minutes.
- Transfer the meat mixture to a baking dish and spread the mashed potatoes evenly over the top.
- If using, sprinkle cheddar cheese over the potatoes.
- Bake for 20 to 25 minutes, or until the top is golden and the filling is bubbling.
- Let rest for 10 minutes before serving.
