Shepherd's Pie is a classic comforting dish featuring a rich, savory meat and vegetable filling topped with smooth mashed potatoes and baked until golden. This version is easy to prepare, satisfying, and ideal for a complete family meal.

  1. Preheat the oven to 400 F or 200 C.
  2. Place the potatoes in a large pot, cover with salted water, and boil until tender, about 15 to 20 minutes.
  3. Drain the potatoes, then mash with butter and milk until smooth. Season with salt and pepper. Set aside.
  4. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  5. Add the garlic and cook for 1 minute more.
  6. Add the ground beef and cook, breaking it up, until browned and no longer pink.
  7. Stir in the tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper.
  8. Add the peas and carrots and simmer until the mixture thickens slightly, about 5 to 7 minutes.
  9. Transfer the meat mixture to a baking dish and spread the mashed potatoes evenly over the top.
  10. If using, sprinkle cheddar cheese over the potatoes.
  11. Bake for 20 to 25 minutes, or until the top is golden and the filling is bubbling.
  12. Let rest for 10 minutes before serving.
