These salmon croquettes are crisp on the outside, tender on the inside, and packed with savory flavor. Made with flaked salmon, breadcrumbs, onion, herbs, and a simple binder, they are a versatile option for a quick lunch, light dinner, or appetizer.   1. In a large bowl, combine the flaked salmon, breadcrumbs, eggs, onion, parsley, Dijon mustard, lemon juice, garlic powder, salt, black pepper, and mayonnaise.
  2. Mix gently until the mixture holds together. If it feels too soft, add flour 1 tablespoon at a time until it can be shaped easily.
  3. Form the mixture into 8 to 10 small croquettes or patties.
  4. Place the croquettes on a plate and chill for 10 minutes to help them firm up.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Fry the croquettes for 3 to 4 minutes per side, or until golden brown and heated through.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve warm with lemon wedges, salad, or your favorite dipping sauce.
