Ingredients
- 2 cups cooked salmon, flaked
- 1 cup breadcrumbs
- 2 large eggs
- 1/4 cup finely chopped onion
- 2 tablespoons chopped parsley
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons mayonnaise
- 2 to 3 tablespoons all-purpose flour, if needed
- 1/3 cup vegetable oil, for frying
Instructions
- In a large bowl, combine the flaked salmon, breadcrumbs, eggs, onion, parsley, Dijon mustard, lemon juice, garlic powder, salt, black pepper, and mayonnaise.
- Mix gently until the mixture holds together. If it feels too soft, add flour 1 tablespoon at a time until it can be shaped easily.
- Form the mixture into 8 to 10 small croquettes or patties.
- Place the croquettes on a plate and chill for 10 minutes to help them firm up.
- Heat the vegetable oil in a large skillet over medium heat.
- Fry the croquettes for 3 to 4 minutes per side, or until golden brown and heated through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with lemon wedges, salad, or your favorite dipping sauce.
