  1. Preheat the oven to 190 C.
  2. Pat the pork loin dry with paper towels and place it in a bowl or on a tray.
  3. Mix the garlic, olive oil, Dijon mustard, lemon juice, salt, black pepper, rosemary, thyme, and paprika to form a paste.
  4. Rub the seasoning mixture all over the pork loin, covering every side.
  5. Place the sliced onion and carrot in a roasting pan and set the pork loin on top.
  6. Pour the chicken broth into the pan, being careful not to wash off the seasoning.
  7. Roast for about 1 hour and 10 minutes, or until the internal temperature reaches 63 C at the thickest part.
  8. Remove the pork from the oven and let it rest for 15 minutes before slicing.
  9. Serve warm with the pan juices spooned over the top.
