Ingredients
- 1.5 kg pork loin, trimmed
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 onion, sliced
- 1 carrot, sliced
- 1 cup chicken broth
Instructions
- Preheat the oven to 190 C.
- Pat the pork loin dry with paper towels and place it in a bowl or on a tray.
- Mix the garlic, olive oil, Dijon mustard, lemon juice, salt, black pepper, rosemary, thyme, and paprika to form a paste.
- Rub the seasoning mixture all over the pork loin, covering every side.
- Place the sliced onion and carrot in a roasting pan and set the pork loin on top.
- Pour the chicken broth into the pan, being careful not to wash off the seasoning.
- Roast for about 1 hour and 10 minutes, or until the internal temperature reaches 63 C at the thickest part.
- Remove the pork from the oven and let it rest for 15 minutes before slicing.
- Serve warm with the pan juices spooned over the top.
