Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 medium carrot, diced
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 1 cup cooked corn kernels
- 1 cup cooked peas
- 1 medium tomato, diced
- 2 tablespoons tomato paste
- 1/2 cup water or beef broth
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 2 tablespoons chopped parsley
- 1 tablespoon chopped green onions
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook until softened, about 2 minutes.
- Stir in the garlic and cook for 30 seconds, just until fragrant.
- Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink.
- Mix in the carrot, bell peppers, tomato, corn, and peas.
- Add the tomato paste, water or broth, salt, black pepper, paprika, cumin, and oregano.
- Stir well, reduce the heat to low, and simmer for 10 to 12 minutes until the vegetables are tender and the sauce thickens slightly.
- Taste and adjust the seasoning if needed.
- Turn off the heat and finish with parsley and green onions before serving.
