Ingredients
- 1 pound Italian sausage links, mild or hot
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 bell peppers, sliced, any colors
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes, optional
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 cup crushed tomatoes
- 1/2 cup chicken broth
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the Italian sausage links and cook until browned on all sides, about 6 to 8 minutes. Remove the sausage and set aside.
- In the same skillet, add the sliced onion and bell peppers. Cook for 5 to 7 minutes, stirring occasionally, until softened.
- Add the garlic, oregano, basil, red pepper flakes if using, salt, and black pepper. Cook for 1 minute until fragrant.
- Pour in the crushed tomatoes and chicken broth, stirring to combine.
- Return the sausage to the skillet, reduce the heat to low, and cover. Simmer for 15 minutes, or until the sausage is cooked through and the sauce thickens slightly.
- Uncover and cook for 2 to 3 more minutes if you want a thicker sauce.
- Garnish with fresh parsley and serve hot.
