This ground turkey skillet is a practical and delicious main dish made with everyday ingredients. It is light, satisfying, and ready in under an hour, making it ideal for busy weeknights or meal prep. Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 medium carrot, diced
- 1 red bell pepper, diced
- 1 medium zucchini, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 cup chicken broth
- 1 tablespoon tomato paste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook for 3 to 4 minutes, stirring occasionally, until softened.
- Add the garlic and cook for 30 seconds, just until fragrant.
- Add the ground turkey and cook, breaking it up with a spoon, until no longer pink.
- Stir in the carrot, bell pepper, and zucchini. Cook for 5 minutes.
- Season with salt, black pepper, paprika, oregano, and cumin.
- Add the chicken broth and tomato paste, then stir well to combine.
- Reduce the heat to low, cover partially, and simmer for 10 to 12 minutes, until the vegetables are tender and the flavors are blended.
- Taste and adjust seasoning if needed.
- Finish with chopped parsley and serve hot.
