Beef Stroganoff is a classic comfort dish featuring tender strips of beef simmered in a creamy, flavorful sauce with mushrooms, onion, mustard, and sour cream. Served with rice, pasta, or mashed potatoes, it is an elegant yet easy main course perfect for weeknight dinners or special occasions.
Ingredients
- 500 g beef sirloin or tenderloin, cut into thin strips
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 250 g mushrooms, sliced
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 cup beef broth
- 1 cup sour cream
- Salt to taste
- Black pepper to taste
- 1 tablespoon all-purpose flour, optional for thickening
- Chopped parsley for garnish
Instructions
- Season the beef strips with salt and black pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Sear the beef quickly until browned but still tender. Remove and set aside.
- In the same skillet, sauté the onion until softened, then add the garlic and cook for 1 minute.
- Add the mushrooms and cook until they release their moisture and begin to brown.
- Stir in the tomato paste, mustard, and Worcestershire sauce.
- Pour in the beef broth and simmer for 3 to 5 minutes.
- If you want a thicker sauce, dissolve the flour in a small amount of cold water and stir it in now.
- Lower the heat and mix in the sour cream without boiling, to avoid curdling.
- Return the beef to the skillet, stir gently, and heat through for 2 to 3 minutes.
- Adjust seasoning, garnish with parsley, and serve immediately with rice, pasta, or mashed potatoes.
