Ingredients
- 2 pounds beef chuck or stewing beef, cut into medium cubes
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 bay leaf
- 2 medium carrots, sliced
- 2 tablespoons chopped parsley for garnish
Instructions
- Pat the beef dry with paper towels and season it with salt, black pepper, paprika, and thyme.
- Heat the olive oil in a large heavy pan over medium-high heat. Brown the beef in batches so it sears well on all sides.
- Remove the beef and add the onion to the same pan. Cook for 3 to 4 minutes until softened, then add the garlic and cook for 30 seconds.
- Stir in the tomato paste and cook for 1 minute to deepen the flavor.
- Return the beef to the pan, pour in the beef broth, and add the bay leaf and carrots.
- Bring to a gentle simmer, cover, reduce the heat to low, and cook for 35 to 40 minutes, stirring occasionally, until the beef is tender and the sauce has reduced slightly.
- Remove the bay leaf, taste, and adjust the seasoning if needed.
