These beef enchiladas are a cozy, satisfying main dish made with seasoned ground beef, sautéed onion, rich enchilada sauce, and plenty of melted cheese. Rolled in soft tortillas and baked until bubbling, they are perfect for weeknight dinners, meal prep, or feeding a crowd. Serve with rice, beans, or a fresh salad for a complete meal.

  1. Preheat the oven to 375 F. Lightly grease a 9 x 13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 3 to 4 minutes until softened.
  3. Add the garlic and cook for 30 seconds, then add the ground beef. Cook, breaking it apart, until browned and no longer pink.
  4. Stir in the chili powder, cumin, smoked paprika, salt, pepper, half of the enchilada sauce, and the green chiles. Simmer for 2 minutes, then remove from the heat.
  5. Spread 1/2 cup of the remaining enchilada sauce in the bottom of the baking dish.
  6. Spoon the beef mixture evenly down the center of each tortilla, top with a little cheese, then roll them up and place seam-side down in the dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheddar and Monterey Jack cheese.
  8. Bake for 20 to 25 minutes, until the cheese is melted and the sauce is bubbling. Broil for 1 to 2 minutes if you want a more golden top.
  9. Let the enchiladas rest for 5 minutes. Garnish with cilantro and serve with sour cream if desired.
