  1. Preheat the oven to 400 F.
  2. Place the beef in a large bowl and season with salt, black pepper, rosemary, thyme, and minced garlic.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and sear the beef pieces until browned on all sides.
  4. In a roasting pan, combine the onion, carrots, potatoes, and zucchini. Drizzle with the remaining olive oil and toss to coat.
  5. Stir in the tomato paste and beef broth, then add the browned beef on top of the vegetables.
  6. Cover with foil and roast for 30 minutes.
  7. Remove the foil and roast for another 15 minutes, or until the beef is cooked through and the vegetables are tender.
  8. Let rest for 5 minutes before serving. Spoon the pan juices over the beef and vegetables.
