Ingredients
- 1.5 lb beef sirloin or chuck, cut into serving pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 4 cloves garlic, minced
- 1 large onion, sliced
- 3 carrots, cut into chunks
- 2 potatoes, cut into chunks
- 1 zucchini, cut into thick slices
- 1 tablespoon tomato paste
- 1/2 cup beef broth
Instructions
- Preheat the oven to 400 F.
- Place the beef in a large bowl and season with salt, black pepper, rosemary, thyme, and minced garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and sear the beef pieces until browned on all sides.
- In a roasting pan, combine the onion, carrots, potatoes, and zucchini. Drizzle with the remaining olive oil and toss to coat.
- Stir in the tomato paste and beef broth, then add the browned beef on top of the vegetables.
- Cover with foil and roast for 30 minutes.
- Remove the foil and roast for another 15 minutes, or until the beef is cooked through and the vegetables are tender.
- Let rest for 5 minutes before serving. Spoon the pan juices over the beef and vegetables.
