This crustless quiche is a simple, versatile, and satisfying dish that keeps all the creamy, savory flavor of a classic quiche without the pastry. It is ideal for breakfast, brunch, lunch, or a light dinner, and you can customize it with vegetables, cheese, ham, or herbs you already have at home. The result is tender, flavorful, and wonderfully easy to make.
Ingredients
- 6 large eggs
- 1 cup milk
- 1/2 cup heavy cream
- 1 cup shredded cheese, such as cheddar, mozzarella, or Swiss
- 1 cup cooked vegetables, such as spinach, zucchini, mushrooms, or bell peppers
- 1/2 cup diced ham or cooked bacon, optional
- 1/4 cup chopped onion
- 1 tablespoon olive oil or butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg, optional
- 1 tablespoon chopped fresh parsley or chives
Instructions
- Preheat the oven to 375 F. Grease a 9-inch pie dish or similar baking dish with olive oil or butter.
- Heat the oil or butter in a skillet over medium heat. Sauté the onion for 2 to 3 minutes, then add the vegetables and cook until softened. Set aside.
- In a large bowl, whisk together the eggs, milk, cream, salt, pepper, and nutmeg if using until well combined.
- Stir in the cheese, cooked vegetables, ham or bacon if using, and fresh herbs.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
- Let the quiche rest for 5 to 10 minutes before slicing and serving.
