This crustless quiche is a simple, versatile, and satisfying dish that keeps all the creamy, savory flavor of a classic quiche without the pastry. It is ideal for breakfast, brunch, lunch, or a light dinner, and you can customize it with vegetables, cheese, ham, or herbs you already have at home. The result is tender, flavorful, and wonderfully easy to make.

  1. Preheat the oven to 375 F. Grease a 9-inch pie dish or similar baking dish with olive oil or butter.
  2. Heat the oil or butter in a skillet over medium heat. Sauté the onion for 2 to 3 minutes, then add the vegetables and cook until softened. Set aside.
  3. In a large bowl, whisk together the eggs, milk, cream, salt, pepper, and nutmeg if using until well combined.
  4. Stir in the cheese, cooked vegetables, ham or bacon if using, and fresh herbs.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
  7. Let the quiche rest for 5 to 10 minutes before slicing and serving.
