  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; a few small lumps are fine.
  4. Heat a lightly greased skillet or griddle over medium heat.
  5. Pour about 1/4 cup of batter for each pancake onto the hot surface.
  6. Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes.
  7. Flip and cook the other side until golden brown, about 1 to 2 minutes more.
  8. Serve warm with syrup, fruit, or your preferred toppings.
