Vodka sauce is a smooth, rich tomato sauce finished with cream and a small amount of vodka to deepen the flavor. It is a classic choice for pasta, but it also works well over gnocchi, baked dishes, or as a dipping sauce for savory breads. This homemade version is simple, elegant, and ready in less than 40 minutes.
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes, optional
- 1/4 cup vodka
- 1 can (14 oz) crushed tomatoes
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, optional
- 2 tablespoons chopped fresh basil or parsley, for serving
Instructions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the onion and cook for 4 to 5 minutes, stirring often, until soft and translucent.
- Stir in the garlic and red pepper flakes, if using, and cook for 30 seconds until fragrant.
- Pour in the vodka and simmer for 2 to 3 minutes, allowing the alcohol to reduce slightly.
- Add the crushed tomatoes, salt, and black pepper. Stir well and simmer for 10 to 12 minutes, stirring occasionally.
- Lower the heat and stir in the heavy cream until the sauce becomes smooth and pink in color.
- If desired, add the Parmesan cheese and stir until melted and fully combined.
- Taste and adjust seasoning. Serve hot over pasta, gnocchi, or your favorite savory dish, and finish with fresh basil or parsley.
