This classic hummus is silky, bright, and deeply satisfying. Made with chickpeas, tahini, lemon juice, garlic, and olive oil, it comes together quickly and works beautifully as a dip, spread, or side dish. Serve it with warm pita, fresh vegetables, or use it to add richness to grain bowls and sandwiches.
Ingredients
- 2 cups cooked chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons fresh lemon juice
- 1 small garlic clove, minced
- 2 to 4 tablespoons ice water
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- 1/2 teaspoon fine salt, or to taste
- 1 to 2 tablespoons chickpea cooking liquid or water, as needed
- Paprika, for garnish
- Chopped parsley, for garnish
Instructions
- Place the chickpeas, tahini, lemon juice, garlic, cumin, and salt in a food processor.
- Blend until the mixture starts to look smooth, scraping down the sides as needed.
- With the processor running, add the ice water and olive oil gradually until the hummus becomes light, creamy, and fluffy.
- If needed, add a little chickpea cooking liquid or water to adjust the texture.
- Taste and adjust the salt or lemon juice.
- Transfer to a serving bowl and swirl the top with the back of a spoon.
- Drizzle with olive oil and garnish with paprika and parsley before serving.
