This yogurt cake is a simple, reliable bake with a tender crumb and lightly tangy flavor. Made with everyday pantry ingredients, it comes together quickly and bakes into a soft, golden cake that works beautifully for breakfast, afternoon tea, or dessert. The yogurt keeps it moist for days, and the recipe is easy to customize with citrus zest, vanilla, or a dusting of powdered sugar.

- 1 cup plain yogurt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 pinch salt
- Butter or oil, for greasing the pan
- All-purpose flour, for dusting the pan
Instructions
- Preheat the oven to 350 F and grease a 9-inch round cake pan or a loaf pan, then lightly dust it with flour.
- In a large bowl, whisk together the yogurt, eggs, sugar, oil, and vanilla until smooth.
- In a separate bowl, combine the flour, baking powder, and salt.
- Add the dry ingredients to the wet mixture and stir gently just until no dry flour remains. Do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve plain, dusted with powdered sugar, or topped with fresh fruit if desired.
