This no-bake cheesecake is a classic chilled dessert with a buttery crumb base and a silky cream cheese filling. It is elegant enough for special occasions yet simple enough for everyday baking-free preparation. Serve it plain or topped with fruit, chocolate, or a berry sauce for a beautiful finish.
Ingredients
- 2 cups digestive biscuits or graham crackers, finely crushed
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- 1 cup heavy whipping cream, chilled
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- In a medium bowl, combine the crushed biscuits, melted butter, and granulated sugar until the mixture resembles wet sand.
- Press the mixture firmly into the base of a 9-inch springform pan to form an even crust. Chill while preparing the filling.
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar, vanilla extract, lemon juice, and salt, then mix until fully combined.
- In a separate bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- Spread the filling over the chilled crust and smooth the top with a spatula.
- Cover and refrigerate for at least 4 hours, or overnight for the best texture.
- Unmold carefully, slice, and serve chilled with your preferred topping.
