New York cheesecake is a timeless baked dessert known for its dense, silky texture and clean vanilla flavor. This version uses a buttery graham cracker crust and a smooth cream cheese filling baked gently for a perfectly creamy center. Ideal for special occasions or whenever you want a classic restaurant-style dessert at home.

  1. Preheat the oven to 325 F. Grease a 9-inch springform pan and wrap the outside tightly with foil if you plan to use a water bath.
  2. Mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until evenly moistened. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool slightly.
  3. In a large bowl, beat the cream cheese until smooth and free of lumps. Add the 1 1/4 cups sugar and beat until creamy.
  4. Mix in the sour cream, heavy cream, vanilla extract, flour, and salt until just combined.
  5. Add the eggs one at a time, mixing on low speed after each addition. Do not overmix.
  6. Pour the filling over the crust and smooth the top. Place the pan in a larger roasting pan and add hot water halfway up the sides, or bake without a water bath if preferred.
  7. Bake for 1 hour to 1 hour 10 minutes, until the edges are set and the center still has a slight wobble.
  8. Turn off the oven, crack the door open, and let the cheesecake rest inside for 1 hour.
  9. Remove from the oven, cool completely at room temperature, then refrigerate for at least 6 hours or overnight before serving.
  10. Run a knife around the edge, release the springform pan, slice, and serve chilled.
