  1. Preheat the oven to 350 F and grease and flour three 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs, vegetable oil, and vanilla extract until well combined.
  4. Stir the mashed bananas and drained crushed pineapple into the wet mixture.
  5. Add the dry ingredients to the wet ingredients and mix just until combined.
  6. Fold in the chopped pecans.
  7. Divide the batter evenly among the prepared pans and smooth the tops.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  10. To make the frosting, beat the cream cheese and butter until smooth and creamy.
  11. Add the powdered sugar gradually, then mix in the vanilla extract and salt until fluffy.
  12. Place one cake layer on a serving plate and spread with frosting. Repeat with the remaining layers.
