Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon fine salt
- 1 large egg
- 1/2 cup milk
- 1/4 cup unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375 F and line a 6-cup muffin pan with paper liners or lightly grease it.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; the batter should look slightly lumpy.
- Divide the batter evenly among the 6 muffin cups, filling each about 3/4 full.
- Bake for 16 to 18 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
