This banana bread is soft, fragrant, and perfectly moist, making it ideal for breakfast, a snack, or dessert. It uses very ripe bananas to deliver natural sweetness and a rich banana flavor, while a touch of cinnamon adds warmth. The recipe is simple, beginner-friendly, and a great way to use up overripe bananas.
Ingredients
- 3 very ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or pecans, optional
Instructions
- Preheat the oven to 350 F and grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas until mostly smooth, then stir in the melted butter.
- Add the sugar, eggs, and vanilla extract. Mix until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the banana mixture and stir just until no streaks of flour remain. Do not overmix.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
