Ingredients
- 2 medium apples, peeled, cored, and diced
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup milk
- 2 teaspoons baking powder

Instructions
- Preheat the oven to 350 F. Grease a 9-inch round cake pan or a similar medium baking pan.
- Peel, core, and dice the apples. Toss them with the lemon juice and 1 tablespoon of flour to help prevent sinking in the batter.
- In a large bowl, cream the softened butter with the sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Add the dry ingredients to the butter mixture in alternating additions with the milk, mixing just until combined.
- Fold in the prepared apples gently so they are evenly distributed throughout the batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
